We keep a modest number of hives across our own land, and we don't push them to produce more than the land can comfortably give. What that means in practice: one harvest a year, bottled unfiltered and unheated, and a jar count that's different — and always limited — every season.
Because we don't chase volume, we can't promise everyone a jar. What we can promise is that when your name comes up on the waitlist, you'll be the first to know, and you'll have three days to claim yours before it goes to the next person.
